Strawberry Spinach Salad
INGREDIENTS
FOR THE DRESSING
- 4oz ml extra virgin olive oil
- 4 tablespoons red wine vinegar or balsamic vinegar
- 3 tablespoons maple syrup
- 1/4 teaspoon Himalayan salt
- freshly ground pepper to taste
FOR THE SALAD
- 1-2c. garden spinach
- 1/2-1c. fresh strawberries sliced
- 3 tablespoons basil leaves ribonned
- 1/4 c. pecans or walnuts lightly toasted and roughly chopped
- sprinkle with feta or goat cheese optional
INSTRUCTIONS
- Combine all the ingredients for the dressing in a small bowl. Set aside.
- Toss together in a salad or mixing bowl the baby spinach, strawberries.
- Optional add ins — nuts (almonds, pecans, pistachios etc.) and goat cheese, chopped red onion, Avocado, blueberries, sunflower seeds, edemame seeds, etc. (SO MANY OPTIONS!!!)
- Top with the dressing right before serving.
