Dr. Casey’s dream came true of opening up her own office right after receiving her Doctor of Chiropractic degree 2 years ago! It was an arduous task having everything planned in the last year of school but she persevered! 

Promoting healthy living is a passion of Dr. Casey’s! With a dream to help each of her patients get healthier, Dr. Casey continues to keep learning and never gives up!

  1. She is married to Dan Paluch – Yes, the guy on the radio.
  2. She has an almost 1.5 year old!
  3. They live in the country outside of Russell.
  4. She likes to spend a lot of time on Pinterest finding new ways to trick her family into eating healthy. 
  5. She looks forward to cheat days or meals and favorite treat, sweets! Its all about balance, right?!
  6. She likes to make her husband help with crafts around the house! (He secretly loves it!)

Here are some fun facts about our office that make us different: 

  • This is not a quick in and out type of office. Dr. Casey takes time to perform an extensive exam before you get adjusted.
  • We are able to perform X-rays, when necessary, nervous system scans, and a structural analysis. With this information, she is able to give you a very detailed and specific plan for care and how to correct your primary problem! 
  • Our office focuses on Neurostructural corrective care. Making sure primary issues are corrected and do not cause you problems over and over again.
  • Every time you come get adjusted Dr. Casey runs a nervoscope on your back because those are the areas in your spine that are affecting your nervous system. This tool tells her more information than hands can feel. Working on improving nervous system function improves the body’s function, leading to overall health!
  • Adjusting only areas that affect nerve function are specific, corrective adjustments that are original to her practice.

RECIPE:

I was gifted an instant pot for Christmas, so you know what I have been up to —> healthy recipes in the instant pot! This was a great side dish liked by most of the family! (Husband turned up his nose at it but he ate it!!)

Creamy Parmesan Instant Pot Mashed Cauliflower

Creamy Instant Pot mashed cauliflower is a healthier, low carb alternative to mashed potatoes. Prep it in the Instant Pot for an easy holiday side dish!

Ingredients

  • 1 head cauliflower leaves removed and stem cut out
  • 1 cup stock
  • 4 cloves garlic
  • 6 sprigs fresh thyme

Mash with

  • 1/2 cup parmesan cheese freshly grated
  • 1/2 cup greek yogurt plain (coconut milk yogurt can be a diary free substitute)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place the stock, garlic cloves and sprigs of thyme in the bottom of a 6 quart Instant Pot. Place the trivet on top and the cauliflower on the trivet.
  2. Cook for 15 minutes on the steam setting. Do a quick pressure release (release the pressure immediately when the IP beeps). Allow the cauliflower to rest with the lid open for 10 or so minutes, until it cools slightly and it safer to handle (and allows extra moisture to drip off).
  3. Carefully transfer the cauliflower to a new pot with as little liquid as possible from the Instant Pot. 
  4. Mash with the yogurt, cheese, salt and pepper. 
  5. This recipe is easy to re-heat in a pot or the microwave, and keeps in the fridge for 3-4 days.
