It feels like spring is here!!! With spring, come different hobbies, yard clean up, gardening, lots of time spent with grandkids and vacations – traveling long time in a car, sleeping on a different bed, etc. 

One common concern among adults is getting injured or feeling really sore after a workout, favorite hobby/activity or maybe just by taking care of your grandkids. 

The human body is under a tremendous amount of stress from just the average daily activities. Some of us have jobs that require us to sit at a computer for most of the day. Some of us perform repetitive actions in our day. Hobbies that we love doing like gardening, golfing and spring clean up may leave you sore and achy after. GREEK CHICKEN KABOBS

INGREDIENTS:

  • 4 tablespoons olive oil, divided
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon paprika
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon dried thyme
  • 3 cloves garlic, minced
  • 1 shallot, minced
  • Kosher salt and freshly ground black pepper, to taste
  • 2 pounds boneless, skinless chicken thighs, cut into 1-inch chunks

DIRECTIONS:

  1. In a medium bowl, combine 2 tablespoons olive oil, lemon juice, lemon zest, paprika, oregano, basil, thyme, garlic, shallot, 1 1/4 teaspoons salt and 1 1/4 teaspoons pepper.
  2. Stir in chicken until well combined; marinate for at least 2 hours to overnight, turning occasionally. Drain the chicken from the marinade.
  3. Thread chicken onto skewers. Brush with remaining 2 tablespoons olive oil; season with salt and pepper, to taste.
  4. Preheat grill to medium heat.
  5. Add skewers to grill, and cook, turning occasionally, until the chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 10 minutes.
  6. Serve immediately.

Peanut Butter Banana Muffins

Ajax is a muffin lover so we are always trying to make healthier and new kinds of muffins! I have never let him have more than 2-3 at a time but I think he could eat the whole pan if I let him! 

Ingredients

  • 2 ripe large bananas mashed
  • ¼ cup pure maple syrup
  • 1/2 cup whole milk Plain Greek Yogurt
  • 1 large egg
  • 1/2 cup whole milk
  • 1/2 cup creamy peanut butter
  • 2 teaspoons vanilla extract
  • 1 ¾ cups white whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  • Preheat oven to 425°F degrees. Line a 12-count muffin pan with muffin liners or spray with nonstick spray. Set aside.
  • In a medium bowl, mix the mashed bananas, maple syrup, yogurt, egg, milk, peanut butter and vanilla together until smooth..
  • In a large bowl, whisk together the flour, cinnamon, baking soda, baking powder, salt. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not over mix the batter or you will have tough muffins.
  • Evenly distribute the batter between the muffin cups. (I use an ice cream scoop for easy portioning). Bake for 5 minutes at 425°F degrees. Keeping the muffins in the oven, reduce the oven temperature to 350°F and continue to bake for another 12 minutes or until a toothpick inserted in the center comes out clean.
